Beef Rib Roast (Prime Rib)

This roast, cut from the rib, is popular for the holidays and special occasions. It is cut from the "prime" portion that includes the sixth through 12th ribs. They're usually trimmed of the fatty cap section, which leaves the ends of the rib bones cleaned and visible. It is sometimes called a "standing rib" roast, because the bones enable it to stand upright for roasting.
